Vacation breakfast, Lemon Ricotta Pancakes

It's very hard to get out of bed in the morning when your view is this; sun shining in the window, private fireplace warming the chill, satiny sheets with a heavy feather comforter. I could stay in bed all day.

The only thing that drug me out of my cozy warm spot was knowing what I had planned for breakfast: Lemon Ricotta Pancake with fresh strawberries (adapted from TurntableKitchen.com, who adapted it from SmittenKitchen.com,  found at http://www.turntablekitchen.com/2009/02/ricotta-pancakes-for-your-rainy-or-snowy-morning/ ).









Lemon Ricotta Pancakes with Fresh Strawberries
Wash, hull, and cut up 1 pound of fresh strawberries.
Add 1/4 cup sugar (or more if needed, or you just like it sweeter). Stir and set aside. 




INGREDIENTS FOR PANCAKES
4 eggs separated
1 1/3 cup ricotta cheese
1 1/2 T sugar
1 1/2 T lemon zest
1/2 cup flour
Pinch of salt
Butter for the pan
1) Mix the egg yolks, ricotta cheese, sugar, and lemon zest until well combined. Add the 1/2 cup of flour. (Sifting would be best, but no sifter? You just make due.) Mix thoroughly.
2) Whisk the egg whites incorporating as much air as possible. It would be best to mix them with an electric beater to form stiff peaks, but no electric beater? Make due with whatcha got.


3) Carefully fold egg whites into the other mixture 1/3 at a time. Stir very gently in between each addition so as not to flatten the egg whites too much.
Cook station all set up ready to rock.

4) Melt a small pat of butter in a nonstick skillet over medium heat. Cook pancakes until golden brown.


Mmmm... Perfect!

5) Serve with strawberries.

Travel told through food, and recipe for Stuffed Zucchini

The Boy and I are on our annual, traditional vacation. Every year since he was five, we have taken a trip together. We take turns picking location. This year was his turn. Seeing as he just graduated high school, I offered to take him anywhere (not requiring a passport; long story). I offered Hawaii, New England, an Alaskan cruise... Pick.

He chose renting a house somewhere and just hanging out. There's a teenager for ya. I asked where, what kind of environment, what activities would we do... No ideas. Just thought it'd be cool to rent a house somewhere. So I set to work investigating. I researched places all over California; places we had not already been, that allowed us to take the dogs, but had stuff to do.

Where did we end up? Mendocino. And it is a beautiful, relaxing, gorgeous, perfect place! We rented a quirky, little 1880's house with an ocean view, a fenced yard that allowed small dogs, had a kitchen so I could fix all sort of special treats, and a private hot tub on the deck. We arrived yesterday and all I can say is, "Ahhhhh....."

So, I decided to tell our vacation story through the food. My favorite part of any vacation is the food whether it been fancy restaurants, local delicacies, or home cooked treats. This trip allows for the wonderful mix of local restaurants and good home cooking. Plus, cooking in a strange kitchen with who knows what equipment and pantry items is an adventure in and of itself.

Our first evening we arrived was Stuffed Homegrown Zucchini.

Stuffed Homegrown Zucchini

1 large zucchini (Remember those pics I posted a few days ago? We       
                  brought those with us)
1 pound ground turkey
1/2 large onion, diced
2 t olive oil
Crushed garlic to taste
2 8oz can of flavored tomato sauce (whatever flavors you like; I 
                  used one can of Mexican flavored tomato sauce 
                  and one of basil, oregano tomato sauce. Part of 
                  this was out of necessity for me since I am 
                  cooking in a kitchen not my own. I don't have 
                  the herbs and spices I usually have available 
                  to use. If you like, you can use one 16 oz can 
                  of tomato sauce and just add your own flavors)
16oz can of diced tomatoes
1 cup bread crumbs

DIRECTIONS:

1) Preheat oven to 375 degrees. Saute the diced onions in a small amount of olive oil until they are translucent, about 5 minutes over medium heat. Then add the ground turkey and crushed garlic. I used quite a bit, 2 tablespoons, but you can add as you like. Cook until the meat is cooked through


2) Meanwhile, slice the large zucchini in half lengthwise. Scoop out the inside pulpy part with seeds. Leave the firmer, fleshy portion, about 1/2 to 3/4 inch thick all the way around.
3) Add one of the flavored cans of tomato sauce. I used the Mexican spiced can I bought. Stir in well and cook down until most of the liquid is gone. Next drain some of the liquid from the canned diced tomatoes. Add the tomatoes to the pan.



4) I made coarse breadcrumbs from the crusty ends of a baguette I purchased from the local market. This kitchen doesn't have a food processor so I had to make do with what I could manage by hand. If I had been home, I would have used either homemade bread crumbs from my freezer I had ground in the food processor at some previous date, or canned pre-prepared breadcrumbs (but a whole can wasn't worth buying for one little recipe on a vacation.)

Add these to the pan of ground turkey and tomatoes. Stir in and remove from the heat.

5) Fill each zucchini half with the mixture. Spoon the other can of flavored tomato sauce over top. (If desired, you could add cheese to the top part way through the cooking. Parmesan or mozzarella would be good.)

Bake in the oven at 375 until the zucchini is tender, about 45-60 minutes. Times will very based on the size of the zucchini.

6) Remove from oven. Slice and serve with green salad and crusty bread.

Progress

So I've been sticking to my new meal plan for about six weeks now. I've taken to journaling everything I eat, including how I cheat.

I'm happy to say, I've lost six pounds!

Most of which has disappeared in the last two weeks. I might be cheating a little less on my Eating Well.com 1500 calorie meal plan; but mostly, I think it's because I've been so busy with the end of the school year, The Boy's graduation, and cleaning my house, garage, and yard. Even if with, I'm thrilled! I haven't felt too very deprived. Although I do still miss dessert and I struggle with snacking every afternoon between lunch and dinner. The snack I can have just don't sound as good as cookies, bread with butter, ice cream... *sigh* Oh well. That's what I get for not wanting to exercise.

Here's one of my new eating style recipes. I'm a master at modifying recipes to use up leftovers.

Bean and Leftovers Soup
Ingredients:
1 carrot
1 celery stalk
1/4 large onion
2 t olive oil
Leftovers that sound good in a soup: I used leftover grilled chicken though; grilled zucchini, onions, and sugar snap peas; two chicken sausages from the freezer; and tomato paste from the freezer
20 oz chicken broth
1 can navy beans
1 can petite diced tomatoes
1 t dried oregano
Salt and pepper to taste


 1) Dice the celery, carrot, and onion.


 2) Heat the olive oil in a stock pot. Saute the diced veggies until they soften.


 3) Add the tomato paste and stir well to coat the veggies. The tomato paste will get dark and stick to the bottom of the pan. It will thicken and add rich flavor and color to the soup. Just be careful it doesn't burn.


 4) Dice the leftovers and add to the pot.


 5) Add the broth and stir, scraping the bottom and mixing the tomato paste in well. Drain the bean and add them to the pot along with the canned tomatoes, liquid and all. Sprinkle with oregano, salt and pepper. Allow to simmer for 15 minutes.

5... 4... 3... 2... 1...

The count down to the launch of this empty nest experiment is ticking down. 

5... My first school year as Superintendent/Principal wrapped up today. It was a good year in my opinion. Overall, reasonably successful. I'm looking forward to a slower paced summer. Although, as an administrator, I work year-round. I don't have the luxury of summers off.

4... The Boy went on his Senior Trip today. For the seniors grades are over. High school is wrapping up. Only four more days to go.

3... This Sunday is the Baccalaureate.

2... My plans for next week are cleaning, resting after weeks of losing sleep, and cleaning. Have to get ready for the family barbecue celebrating The Boy's graduation. 

1... The Boy graduates high school in six days. Am I ready for this?
